I friend of mine recently gave me these beauties. Beautiful fresh strawberries make the yummiest desserts

The berries were just so pretty! I got a little carried away taking pictures.

Then I got busy making the dessert.

One of the gals from church brought this for potluck one night.

Strawberry Delight

Layer 1:

1½ sticks of butter, softened

1¼ cups flour

1¼ cups crushed pecans

Mix together forming a ball. Flatten in a 9×13 pan. Bake at 350˚ for 20 minutes. Let cool completely.

Layer 2:

2 cups Cool Whip

2 cups powdered sugar

2 8 ounce packages of cream cheese, softened

Mix together and spread on top of Layer 1.

Layer 3:

1 cup water

1 cup sugar

3 Tbsp cornstarch

3 Tbsp strawberry Jello

1 quart of sliced strawberries

On medium heat, cook water, sugar and cornstarch until it is clear. Take it off the heat, add Jello. Stir well. Mix in strawberries. Spread on top of Layer 2.

Layer 4:

Cool Whip

Chopped pecans (optional)

Cover with Cool Whip.  Sprinkle with pecans if desired.

Chill and serve.

Oh.My.Word! This was so good! I wanted to eat the whole thing! Sorry the picture of the final product is a little dark. We were all just ready to devour the dessert. No one cared much about taking time to get a really good picture.

I don’t know which layer I liked best. It was all so good, even if I did forget the pecans on top!

Critics’ Corner

Chip: It was berry, berry awesome! Ha!

Megan: It was DELIGHTFUL!

Katie: A splendid mix of Cool Whip, strawberries, cream cheese, pecans, etc. If I had to choose which layer was my favorite, I’d have to say, “All of the above!”
